Recipe of the Week: Blueberry Pie Bars
Prep Time 10 Minutes Cook Time 1 hour Ingredients: CRUST AND TOPPING 1 1/2 cups all purpose flour 1/2 cup sugar pinch of salt 1 1/2 sticks cold butter cut into cubes FILLING 2 eggs 1 cup sugar 1/3 cup all purpose flour 1/2 cup sour cream pinch of salt 3 cups of fresh Lakeshore County Farm Blueberries Instructions: 1. Spray a 9x13 GLASS baking dish with non-stick spray and set asside 2. Prehead oven to 350 degrees 3. Add flour, sugar, salt and cubed butter into mixing bowl- beat on low until combined and crumbly 4. IMPORTANT: Remove 1 cup of flour mixture and set aside. 5. Take remaning mixture and press firmly into your banking dish, covering the bottom 6. Bake for 15 minutes 7. While crust is baking- whisk eggs in large bowl 8. Add sugar, sour cream, flour and salt 9. Gently fold in your Lakeshore Country Farm berries 10. When crust is ready-remove from oven and add filling, gently spooning over the top of the crust 11. Sprinkle with the remaining crust mixture you had set aside 12. Bake for 1 hour or until top is lightly browned Cool slightly before serving to make it easier to cut Enjoy!
